Analysis and Mitigation Strategies of Croissant Production at PT XYZ

This purpose of this research is to identify risk, analyzes risk priorities, and formulate alternative strategies determine the priority that can be applied minimize in production process croissant at PT XYZ. The methods used were Failure Mode Effect Analysis (FMEA) method Analytical Hierarchy Process (AHP). FMEA asses while AHP mitigation strategies. Based on result, there are 19 risks which divided into 3 factors, namely: raw materials, process, deliveries. result from assessment determination priorities have a high-Risk Priority Number (RPN), namely damage materials during storage warehouse (52.6), machines equipment not working optimally (292.3), delivery vehicles problems (73.1). material factors make improvements placement separation clear types (0.384), factor replace long life (0.435), improve performance control maintenance regular basis (0.610).
